Warm vs Cold Fermentation for Sourdough

If your sourdough recipe spends several hours on the bench and then goes into the fridge overnight, those two stages are doing different jobs.

Warm fermentation moves the dough along. Cold fermentation slows it down.

For many home bakers, the usual pattern is a warmer bulk fermentation followed by a cold proof after shaping. You are not really choosing warm or cold — you are using temperature to control the pace of the same fermentation.

What Happens During Warm Bulk Fermentation?

Bulk fermentation usually happens after the dough has been mixed and before it is shaped.

As fermentation progresses, the dough should begin to feel lighter and more organised. It gains volume, develops bubbles and becomes easier to handle.

Temperature has a big effect on how quickly this happens.

A warmer dough will generally ferment faster. A cooler dough will take longer.

This is why the same recipe can behave quite differently in a New Zealand kitchen in January compared with July.

Do not rely only on the number of hours in the recipe. Look at the dough as well.

Useful signs include:

  • a noticeable increase in volume
  • bubbles along the sides or surface
  • a smoother, slightly rounded top
  • a lighter, airier feel
  • enough strength to hold together when you lift or shape it

The clock tells you when to check. The dough tells you when it is ready.

What Does the Fridge Actually Do?

After shaping, many sourdough recipes send the loaf into the fridge for an overnight cold proof.

The lower temperature slows fermentation considerably and gives you a much wider baking window.

This is useful for a simple reason: you can shape the bread in the evening and bake it the following morning instead of trying to complete the entire process in one day.

Cold dough is also firmer, which can make it easier to turn out of the banneton and score cleanly before baking.

The Fridge Does Not Stop Fermentation Immediately

This is an important point.

A warm loaf does not become cold the moment it goes into the fridge. The outside cools first and the centre takes longer.

Fermentation continues while the dough is cooling, then carries on much more slowly once it is cold.

So if bulk fermentation has already gone too far, putting the loaf in the fridge will not rescue it.

If your dough looks good when you shape it but regularly comes out of the fridge very loose or flat, you may need to end bulk a little earlier rather than removing the cold proof altogether.

Does Cold Proofing Make Sourdough More Sour?

It can change the flavour, but there is no simple rule that says a longer cold proof always means a more sour loaf.

Flavour is affected by the entire fermentation process, including the starter, flour, dough hydration, temperature and total fermentation time.

An overnight proof may give the bread more time to develop flavour, but leaving the dough in the fridge for longer and longer is not automatically better.

Eventually the dough can lose strength.

Use cold proofing mainly as a way to manage fermentation and your baking schedule. Any change in flavour is part of the result, not the only reason to do it.

Same-Day or Overnight Sourdough?

Both approaches can work.

Same-Day Sourdough

You complete bulk fermentation, shape the loaf, allow it to finish proofing at room temperature and bake it the same day.

This works well when you are home and able to keep an eye on the dough.

The downside is that fermentation does not always cooperate with your dinner plans.

Overnight Cold Proof

You complete bulk fermentation, shape the loaf and put it into the fridge.

The following day, many recipes allow you to score and bake the loaf straight from the fridge.

This is often easier to fit around work, family and everything else happening during the day.

Warm Weather Changes the Schedule

If your sourdough suddenly seems much faster in summer, there may be nothing wrong with your starter or recipe.

Your dough may simply be warmer.

On a warm day, bulk fermentation can finish earlier than expected. If you follow the same timing you used through winter, the dough may be too far along by the time you shape it.

Try cooler water, keep the dough somewhere less warm, or start checking it earlier.

In winter, the opposite can happen. A cool kitchen may simply mean the dough needs more time.

What If the Dough Barely Rises?

If bulk fermentation is moving very slowly, do not put the dough into the fridge just because the recipe says it should be ready by a particular time.

The fridge will slow it down even further.

First consider whether:

  • the dough is quite cool
  • the starter was active when you used it
  • the recipe simply needs more time in your kitchen

Small changes are usually enough. You do not need to completely redesign the recipe after one slow loaf.

What If It Overproofs in the Fridge?

If the loaf regularly becomes loose, flat or difficult to score after an overnight proof, look at what happened before it went into the fridge.

Bulk fermentation may have gone a little too far, the dough may have been particularly warm, or your fridge may run warmer than you think.

Try ending bulk slightly earlier on the next bake and compare the result.

So, Which Is Better?

Neither.

Warm and cold fermentation are useful for different reasons.

  • Warm fermentation helps the dough develop and gets fermentation moving.
  • Cold fermentation slows the process and gives you more control over when you bake.

For many sourdough recipes, you will use both.

The useful skill is not memorising one perfect fermentation time. It is learning how your dough behaves when your kitchen is warmer, cooler, faster or slower than the recipe writer's kitchen.

Once you start using temperature to control the pace rather than expecting the clock to make every decision, sourdough becomes much easier to fit around everyday life.
